Lobar; Crested Butte, Colorado
The Lobar, a basement-level sushi restaurant on Crested Butte's Elk Avenue, turns into a DJ-fueled dance party late at night. Fresh fish gets flown in nearly daily and thanks to the dim lighting, velvet curtains, and urban-style music, you'll forget you're in one of the most remote ski towns in Colorado. Must Order: The Snow Blossom Roll, which has tempura shrimp, tobikko, spicy crab and cucumber, topped with walu sashimi and toasted sesame seeds.
