Farm-to-Table Dining For Skiers
Araxi: Whistler, BC

Now living in the heart of Pemberton's farming community, Executive Chef James Walt personally selects the freshest local ingredients and frequently collaborates with local growers. Farm-to-table is nothing new for Araxi, which has been sourcing local ingredients for 14 years. Araxi’s 100-mile seasonally rotating menu includes house-smoked trout, Pemberton cheese and lamb, Howe Sound oysters and fresh seafood catches like Whole BC Dungeness Crab and Halibut direct from the Pacific. His time spent cooking in Rome and shopping for ingredients daily shaped the way he cooks today. “If it's not local and in season, it's simply not served,” he says. (604 932 4540; www.araxi.com/)
