Farm-to-Table Dining For Skiers
Montagna: Aspen, CO

Montagna, the signature restaurant of The Little Nell, locally sources 70 percent of its produce during the summer and 15 percent in winter. The hotel’s restaurants serve local, Milagro Ranch grass-fed beef and local pork from Paonia, Colorado. New this year, they are serving local Emma Farm Wagyu, offered as a tenderloin with red pepper, paprika and spaetzle or as simple as a Wagyu pastrami sandwich (on the bar menu). Montagna cures its pork products such as ham, salumi and pancetta with organic, nitrate-free pork. The pastry chef sources fresh milk and cream from Paonia. Montagna led the movement in banning endangered fish species like Swordfish and Chilean Seabass, and has switched to American farm-raised caviar from the endangered Caspian Sea Caviar. The Little Nell has expanded the list of banned seafoods in accordance with the Monterey Bay Aquarium Seafood Watch protocol to determine seafood choices.  (970.920.6330; thelittlenell.com)
