Tucked into the Vista lounge, Yama is a sushi bar with a view—floor-to-ceiling windows overlooking the Wasatch and Uinta mountains. The menu even reads like an ode to Utah’s forested slopes, with rolls such as West of the Mines (crispy softshell crab, blackened albacore tuna, and mango), Empire (Maine lobster, ponzu butter sauce, and the chef’s selection of sashimi), and of course Wasatch (Montage Mountain Ale–battered shrimp, spicy tuna, salmon, and tobiko). Got a sweet tooth? Sample the sesame-seed beignets (served with a five-spice chocolate fondue).
