Nestled inside Pepi’s Gasthaus Gramshammer, in the heart of Vail Village, Antlers Room dishes an unusually broad array of wild game, from standards like bison, deer, duck, and wapiti elk to harder-to-find fare like boar, caribou, antelope, and even rattlesnake. Start with elk short-loin carpaccio with arugula in a lemony vinaigrette—or, for the more adventurous, marinated rattlesnake cocktail—followed by flavorful wild-boar loin in mustard, garlic, and herbs or tenderly grilled peppered antelope medallions over shallots.
