The Viking Dinner Yurt, The Canyons, Park City, Utah
Music from a baby grand is the first hint of what awaits at this 32-person yurt set at 8,000 feet, above Red Pine Lodge. Upon delivery via a snowcat-pulled sleigh, guests dine by candlelight on Scandinavian fare. Five-course menus change monthly. This month’s includes roasted fennel broth with Norwegian meat dumplings, pan-roasted organic chicken and Meyer lemon tarts.; 435-615-9878

Zach’s Cabin, Beaver Creek, Colo.
Sip a hot toddy at The Ritz-Carlton before boarding a snowcat-drawn sleigh up to this elegant Bachelor Gulch chalet. Zach’s is known for its hearty seasonal dishes, including braised beef short ribs, lobster and porcini tagliatelle, seared Muscovy duck and chili-crusted venison tenderloin. All pair well with wines from the Wine Spectator “Best Of” Award list.; 970-754-6575

Moonlight Dinners, Big Sky, Mont.
Betsy and Dolly, a pair of enclosed snowcats, are your ride to a backcountry yurt on Andesite Mountain. Sled down torchlit runs, then warm up around a bonfire before dinner. The menu includes French onion soup, filet mignon with peppercorn sauce and garlic mashers, and Toblerone chocolate fondue for dessert.; 406-995-3880

Allyn’s Lodge Fireside Dinners, Sugarbush, Vt.
The 12-passenger Pisten Bully snowcat (complete with flatscreen TV with surround sound) transports skiers to Allyn’s Lodge, midmountain on Lincoln Peak, for full-moon skiing, snowshoeing, views of the Mad River Valley and fireside dinners. Hearty Vermont dishes made with locally sourced ingredients include farmhouse chowder, stews, risotto and beef bourguignon.; 800-537-8427
