The moment you walk into Café Diva, you’ll be overwhelmed with the smell of citrus, fennel, and cardamom. The casual yet classy environment, combined with all the smells that fill the space are overwhelming shocking to senses at first. Take a second, sit down, enjoy the warm, fluffy bread and fresh olive oil while you peruse the innovative menu. Opened at the tail end of ’98, owners Paul Underwood, Beth Fadel, and Kate Rench strive to fill their restaurant with quality ingredients that foodies will appreciate. Their tomato lobster bisque is legendary in the area, as is their elk tenderloin—no fork necessary. The cabernet-veal demi glace is pretty much perfect and Yukon gold mashed potatoes and crunchy string beans with almonds sprinkled on top make the plate beautiful to look at and delicious. Each step of the meal is just as great as the next, with a wide selection of wines by the glass to complement each phase. Thanks to a patient and friendly wait staff, the meal doesn’t feel rushed. Feel free to linger over a shared dessert because you won’t be able to eat your own after the huge, delicious portions Café Diva sets in front of you., (970) 871-0508
