Don't think they were actually called ski cookies. The ingredients were things such as sweet potato, dried cherries, nuts, oatmeal.....

Here is the recipe for the Super Cookie 2/3 C flour, 1 1/3 C oats, 1 tsp baking soda, 1/2 tsp baking powder, 1/2 tsp salt, 1/2 tsp cinnamon, 1 C mashed peeled sweet potato, 2Tbsp coconut oil, 4 Tbsp nut butter, 1/4 C honey, 2 Tbsp molasses, 1 tsp vanilla, 3/4 C of chopped nuts and seeds, 3/4 C dried tart cherries. Preheat oven to 325, Mix the flour , oats, baking soda, baking powder, salt, and spices in a small bowl. In another bowl cream the potato, oil, and nut butter until smooth. Mix in the honey, molasses, and vanilla. Add the dry ingredients and mix until smooth, then stir in the nuts and fruit. Form balls and place on greased or parchment-lined baking sheet. Bake 12-15 minutes. Cool completely on rack. Makes about 16 cookies.
