A key determinant of a chili's greatness is the freshness of the spices, Burt insists. He gets his from local restaurant suppliers—"restaurants turn over a high volume of food, so the spices are fresher—and from an online purveyor called Pendery's (penderys.com). The company has been selling mail-order spices since 1870, when many of its customers were chuck-wagon cooks on the Stage Line.
