Backcountry Cooking
Rice, Lentil Chili, Calzones

Rice in a Nut Curry Sauce (serves two)
Plain pasta and rice can get boring in the backcountry, so try adding spices and fruit into the mix for something different. The best part of this delicious meal is that you can make it in one pot, keeping cleanup to a minimum.
1 cup rice
2 cups water
1 tbs. butter
3 tbs. dehydrated vegetables
1 tbs. dehydrated onion
3 tsp. curry
¼ tsp. garlic
3 tsp. soy sauce
1 cup white sauce
1 tsp. brown sugar
3 tbs. raisins (or other dried fruit)
3 tbs. nuts
pepper and hot sauce to taste
In a frying pan, combine water, rice, butter, garlic, and onion. Cook until the rice is done (drain if necessary). Stir in soy sauce, brown sugar, and white sauce. Add nuts and desired spices to the mixture, then fry for a few minutes to make sure it is cooked through.

Lentil Chili (serves two to three)
For a hearty meal that is easy and warms you from the inside out, this chili is perfect. If you wanted to get fancy, you could try making cornbread to go along side. If not, add cheese to bump up the fat content.
1 cup lentils
3 tbs. dehydrated tomato paste
1 tbs. chili powder
1 tbs. dried onion
1 tsp. oregano
1 tsp. garlic powder
4 cups water
Combine all the ingredients into a large pot and bring it to a boil. Reduce the heat and let the chili simmer for around 30 minutes. Fill your bowl to the brim and top with cheese.

Calzone (serves one)
Make yourself a customized at-home favorite in the wilderness. Not for beginner backcountry cooks, the crust can be tricky to make at first, and the edges do come apart fairly easily, but if you get everything to work out, this calzone recipe will quickly becomes your favorite backcountry meal.
Crust:
2/3 cup flour
½ tbs. baking powder
1 tbs. butter
a pinch of salt
Sauce:
1 tbs. tomato base
dried onion
oregano, basil, or other desired spices
water
Toppings:
cheese
summer sausage
wild greens
Mix the butter, flour, baking powder, salt, and water to form dough that does not stick to your fingers but still stays in a nice ball. Spread the dough into a flat piece. Place sauce and any desired toppings on one half of the dough. Fold the other half of the dough over the top and pinch the edges together, sealing in the toppings. Place the calzone in a heated frying pan and cook for about 10 minutes on each side or until it is golden brown.
